If you have carrots that are wilting or ready to expire, I've got a super easy tip for you today on How to Freeze Carrots. Just like freezing ripe bananas, carrots can be grated and frozen to use in a recipe later. I have found it's better to grate the carrots before freezing them.
Just follow my easy steps for freezing grated carrots!
You will need a mini food processor and regular or baby carrots. I have a full sized food processor for bigger jobs like grinding oats and a mini food processor for small jobs, like grating carrots or chopping nuts.
Put the carrots in the mini food processor and pulse until they are grated evenly. Then place them in a bowl. A one (1) pound bag of baby carrots yields a little over 2 cups when grated.
Put the date on a quart sized Ziploc bag and scoop the grated carrots in the bag. Place the Ziploc bag of grated carrots in the freezer. They freeze well for up to 6 months.
Then the next time you're making a recipe using shredded carrots, just thaw the grated frozen carrots and use them in your recipe. Grated frozen carrots also work great in soups and casseroles!
